Maltose powder is a carbohydrate of maltose, a sweetener and a filler. It is a white powder made of high quality starch by double enzymatic hydrolysis, decolorization, dissociation refining, concentration and spray drying. Its main components are maltose and a small amount of malt polymers. It has good fermentability and is used in the manufacture of bread pastry and beer, and can delay the aging of starch in pastry.
In addition, maltose powder is used to replace starch syrup produced by acid hydrolysis in the confectionery industry. It not only has soft taste, moderate sweetness, and hard candy is not easy to stain, but also has good transparency and good sand resistance, thus prolonging storage life.
