Inulin is contained in the protoplasm of cells in a colloidal form. Unlike starch, it is easily soluble in hot water and precipitates from water when ethanol is added. It does not react with iodine. In addition, inulin is easily hydrolyzed to fructose in dilute acid, which is the characteristic of all Fructan. It can also be hydrolyzed into fructose by inulinase. Both humans and animals lack enzymes that break down inulin. Inulin is another form of energy storage for plants other than starch. It is an ideal functional food ingredient, and also a good raw material for the production of oligofructose, polyfructose, High-fructose corn syrup, crystalline fructose and other products. |
