Vitamin B12, also known as cobalamin, is a polycyclic compound containing cobalt trivalent, four reduced pyrrole rings are linked together into a Coo ring (similar to porphyrin), is the only vitamin containing metal elements. Vitamin B12 is a red crystalline powder, odorless and tasteless, soluble in water, insoluble in ethanol, insoluble in acetone, chloroform and ether, [7] the most stable under pH 4.5 ~ 5.0 weak acid conditions, strong acid (pH< 2) or alkaline solution decomposition, heat can have a certain degree of damage. Higher plants and animals cannot make vitamin B12, and all vitamin B12 in nature is synthesized by microorganisms. Vitamin B12 is the only vitamin that requires the help of a gastric parietal cell secretion [8] (endogenous factor) to be absorbed, and is involved in the manufacture of bone marrow red blood cells, preventing pernicious anemia, and preventing the destruction of nerves in the brain
