Bromelain, also known as bromelain. A sulfhydryl protease extracted from pineapple juice, peel, etc. Light yellow amorphous powder with a slight peculiar odor. Molecular weight 33000. The optimum pH value for Casein, hemoglobin and BAEE is 6~8, and for gelatin is 5.0. Enzyme activity is inhibited by heavy metals. Slightly soluble in water, insoluble in ethanol, acetone, chloroform, and ether. It preferentially hydrolyzes peptide chains on the carboxyl side of basic amino acids (such as arginine) or Aromatic amino acid (such as Phenylalanine and tyrosine), selectively hydrolyzes fibrin, which can decompose muscle fibers, but has weak effect on fibrinogen. It can be used for beer clarification, medicinal aid in digestion, and anti-inflammatory and swelling reduction. | ||
