Description
Papain (EC 3.4.22.2) is an endolytic plant cysteine protease enzyme which is isolated from papaya (Carica papaya L.) latex. Papain is obtained by cutting the skin of the unripe papaya and then collecting and drying the latex which flows from the cut. The greener the fruit, more active is the papain.
Papain is a cysteine protease of the peptidase C1 family, which is used in food, pharmaceutical, textile, and cosmetic industries.
